June is here! And with it the season for delectable strawberries. So in case you get tired of them in shortcake or plain, I offer up this simple ‘secret’ recipe – Strawberry trifle:

You will need: a serving bowl,  cake, pudding, 2 or more cups of fruit, whipped cram or topping

Traditionally, most trifle recipes call for pound cake, I prefer a chiffon or angel cake, which is not so dense. I make my own pudding, but a ‘box’ one will do fine,  and you can mix in up to 1 1/2 cup of whipped cream or topping, to make it lighter. Strawberries are excellent, pairing them with some sliced bananas, pineapple chunks and putting a little chocolate syrup on top will give you a ‘banana split trifle’.

Pull the cake into bite size chunks, put a layer in a bowl, ( I sprinkle a little juice from the fruit on the cake) cover it with an inch or so layer of pudding and then a layer of cut up fruit (sweetened if you like) repeat layers, ending with a layer of fruit.

Let it sit in the fridge for an hour or so and serve, topped with whipped cream if you like that.

It doesn’t have to be strawberries, blueberries and peaches work well too, and you could vary the pudding, a cherry and chocolate pudding trifle perhaps?
