As they say, “It’s right around the corner”.

Hubby is a big fan of Chocolate covered cherries, so I am making him some for his Valentine gift. Ok, mine are not uniform or really pretty like the ones in boxes at the store, but they taste good!

So, if you want to make some for yourself, here is how to do it:

You need a maraschino cherries,  either 2 small jars or one of the bigger ones. Drained well and patted with paper towel!

2 pounds of powdered sugar

1 stick of butter

1 can of Sweetened Condensed milk

Mix the butter, sugar and milk together in a good-sized bowl until you have a nice smooth ‘dough’

Wrap some dough around each cherry and place in the fridge overnight to set up and so it won’t melt when dipped in the warm chocolate.

The  next day, (at least in my world) melt 2 cups of chocolate chips and 2 tablespoons of shortening in a bowl. You can do this in the microwave or over simmering water in a pan on the stove. Quickly dip the cold centers into the chocolate, coating well and put them on a sheet of wax paper or parchment….

I put the resulting candy in a Ziplock in the fridge for nibbling as needed.
