This  our ‘semi-famous’ pork and rice casserole, was requested by a friend.

Here it is.

Another of my easy to multiply meals. For a 9 inch square pan which serves 2 generously and leaves some left for your lunch tomorrow. For more, just go to a 9 X13 pan and use 6 -8 chops, double the rice soup and water.

4 medium pork chops – brown them and set aside

Mix in the baking pan:

1 1/2 cups rice

Some chopped onion

Some chopped celery

1 can cream of mushroom soup

3 cups water

Stir well to blend everything put browned chops on top, cover with foil

Bake 30 minutes at 350 degres, take off foil and bake 15 – 20 minutes longer. You can leave the foil on if you prefer a ‘mushy’ textured rice…
